With all of our spice blends, a commonly asked question is, “Can it be used as a rub?” While it’s easy to just say yes or no, I think it might be better to outline the differences and uses.
There are two types of rubs: dry rubs and wet rubs. Dry rubs are a blend of herbs and spices that are generously rubbed into meats before cooking. It can be a single spice, such as pepper, or a blend of many herbs and spices to get the desired flavor. They also typically include salt and/or sugar. Wet rubs are the spices made with oil or butter, so that the rub sticks better to the meat. Using oil in wet rubs is a great way to make sure the meat stays moist, as the oil becomes a natural barrier to prevent liquids coming out, creating a nice, juicy cut.
Marinades have herbs and spices, as well as an acid component like vinegar which helps the meat become tender. The meat is soaked prior to cooking for an hour or more. Using a marinade can result in a delicious boost of flavor to your meat.
Spice Blends and Seasonings
Seasonest falls under this category. Basically, different herbs and spices are combined together to achieve the taste you want, such as spicy, sweet, smoky, etc. These are sprinkled over meats or vegetables and then cooked immediately. They can also be used in the end as a finishing flavor.
