Soulful, Southern Fried Chicken

Happy Friday!

Have you ever had a moment where you suddenly got caught up in the insatiable desire to have some good, old-fashioned, Southern home cooking? Yes, yes… we definitely understand! Well, we’re excited to bring you a fun and soulful, Southern recipe just in time for the weekend! Our Soulful, Southern Fried Chicken is sure to satisfy your taste buds.

Ingredients:

  • 1/2 cup hot sauce (any brand)
  • Seasonest’s Soul Food Blend
  • 2 eggs
  • Oil of your preference (Healthiest is best!)
  • 1 1/4 pounds of chicken (We recommend chicken drumsticks.)
  • 1/2 cup salt
  • 1/8 cup pepper
  • 1/8 cup garlic powder
  • 1 Tbsp cayenne pepper
  • 1 cup flour

Utensils:

  • Deep fryer or pan (If using a pan, please use oven mitts.)
  • Tongs
  • One large bowl
  • One small bowl
  • Paper towels
  • Large/gallon-size storage/freezer bag
  • One large plate

Instructions:

  • If using a deep fryer, fill with a minimum of 10 cups of your choice of oil and preheat to 350 degrees. If using a pan, heat to medium/high and fill no more than half way with oil.
  • Take small bowl and combine salt, pepper, garlic powder, cayenne pepper and Seasonest Soul Food Blend together. Set aside.
  • Combine egg and hot sauce into large bowl. Mix well and set aside.
  • Fill gallon-size storage/freezer bag with flour. Set aside.
  • Take chicken pieces and wash with cold water. Pat dry with paper towels and roll into bowl of seasoning.
  • Place seasoned chicken pieces into the bowl of egg and hot sauce and place 1/4 of the pieces into the fryer for 10-15 minutes, until golden brown. Repeat with the remaining 3/4 of chicken.
  • Once chicken is cooked, place upon large plate covered with paper towels. Use another paper towel to pat chicken pieces dry and remove any excess oil left over from cooking.
  • Serve and enjoy!

*Please note: This recipe makes about 12 chicken pieces, or 3-4 servings!

It’s a great day for celebration. Not only is it almost the weekend, but it’s also the day we’re celebrating February’s seasoning of the month, our Soul Food Blend!

The Soul Food Blend really is the “heart and soul” of our blends. It has rich, hearty flavors that remind you of favorite foods and the comforts of home. When you think “soul food”, what comes to mind? For us (just to name a few) it is fried chicken, gumbo, biscuits, collards, shrimp and grits, okra and red beans and rice. Mmm… it’s time to get cooking.

Homemade Pizza

It’s Friday. You have time to do things tonight and tomorrow and Sunday… wow. What to do with a whole weekend? How about having some fun and making a pizza with family or friends?

Ingredients

Dough

  • 2.5 cups flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 (0.25 oz) package of active, dry yeast
  • 1 cup warm water

Etc.

  • 3 cloves of garlic
  • Tomato-based sauce
  • Pepperoni slices
  • Mozzarella cheese
  • Seasonest Italian Blend

Instructions

  • Preheat oven to 450 degrees.
  • Take a medium or large bowl and pour in the warm water. Then, add the sugar and yeast until dissolved. Leave for 10 minutes (it will be creamy).
  • While waiting, mince garlic cloves. (How to: Peel the garlic clove out of its rough shell (you want the part that is smooth and shiny). Rinse it off and place it on a cutting board. Take a knife and press into the garlic with the flat side of the knife until garlic flattens. Chop into small pieces and leave to the side until ready to use.
  • Once creamy, add in flour, salt and oil and mix and until smooth. Leave for 5 minutes.
  • Sprinkle a clean surface with flour (lightly) and roll into a ball. Let it sit for a moment.
  • Spread olive oil lightly on a pan.
  • Roll out dough to desired shape and place upon pan.
  • Take the tomato sauce and spread it over the dough using a spoon for even distribution.
  • Add the garlic, then a generous amount of cheese and the pepperoni slices.
  • Top with Seasonest Italian Blend.
  • Bake for 15 minutes, or until golden brown.
  • Let sit for 5 minutes to cool down.

Recipe: Soulful, Delicious Potato Chips

Happy Friday Everyone!

We’ve got a fun snack recipe just in time for the weekend. This is a great family activity, or something fun that you can do with friends! There are also quite a few ways to make potato chips (baking, frying or microwaving) and we are going to show you how to make them! We used a deep fryer, but you can certainly use the alternate methods listed in the recipe.

Ingredients

  • 4 potatoes
  • 3 tbsp. of sea salt
  • Soul Food or Soul Food Mild Spice Blend
  • 1 quart of your choice of oil

Instruments

  • Deep fryer, microwave, pan or baking sheet/oven
  • Oven mitt (Please use this anytime you plan on frying or handling hot things!)
  • Tongs (if frying- to remove potato chips)
  • Knife, food processor or mandoline
  • Vegetable peeler
  • Potato scrubber
  • Colander
  • 3 large plates or bowls
  • Paper towels

Instructions

  • First, lay out two large bowls or plates and cover them with paper towels (You will need them for later.) Keep extra paper towels close at hand for later use.
  • Then, wash and rinse your potatoes. Make sure to scrub off the dirt, preferably with a potato scrubber.
  • Take a vegetable peeler, or a knife and carefully cut off the potato skins (Some choose to leave them on for extra crispiness.).
  • Slice the potatoes with a knife, food processor or mandoline to the desired width. Rinse the potato slices.
  • Get a large bowl and fill with cold water, adding 3 tbsp. of sea salt. Place the potato slices in the bowl for 30 minutes.
  • After 30 minutes, take the slices out of the water and rinse them in a colander and lay out to dry on one of the plates or bowls with paper towels. Let potato slices dry for about 30 minutes.
  • Begin cooking:
    • If using a deep fryer, take out the frying basket and fill with desired amount of oil (Do not overfill!). Preheat fryer to 350 degrees (It should take about 10-15 minutes to heat up.). *PLEASE NOTE: Only cook a few at a time!
    • If using a pan, fill with at least an inch of oil and slowly turn up the heat. Test the temperature with a wooden spoon; if it’s ready, bubbles will form around the wooden spoon! *PLEASE NOTE: Only cook a few at a time!
    • If you are microwaving, place potato slices apart from one another and cover with a paper towel. Cook on high power for 3 minutes; check on them and photo 3 (4)continue cooking at one minute intervals until they are cooked to your liking.
    • If baking in the oven, place potato slices apart on a gently oiled, buttered or greased baking pan and then oil/butter the potato slices. Cook for 15-20 minutes at 350 degrees, or until golden brown.
  • Cook until golden brown.
  • Take the potato slices and lay them on the second bowl or plate covered in a paper towel to soak up the excess oil.
  • Season with Seasonest’s Soul Food Blend!
